Bacon-Wrapped Chicken Salad

This savory bacon-wrapped chicken salad is crispy and loaded with vegetables, hard-boiled eggs, and homemade ranch dressing.

Extra Tip.. Be creative with this chicken salad! Include whatever vegetables that are currently in your refrigerator, such as bell pepper, broccoli, cauliflower, etc.

Ingredients

4 bacon-wrapped chicken breasts
3 hard-boiled eggs (halved)
3 romaine hearts (chopped)
2 cups cherry tomatoes (halved)
1/4 red onion (minced)
2 cups cucumber sliced in half-moons
1/3 cup slivered almonds
1 large avocado (chunked)
1/2 cup homemade ranch dressing or Greek yogurt blue cheese dressing

For the Chicken Seasoning

Around 2-lbs. of boneless, skinless chicken breast x 4
Regular-cut bacon
Garlic powder
Brown sugar
Italian seasoning
Paprika
Salt
Pepper

Steps

1. First, prepare the Bacon-Wrapped Chicken, following these steps.

  1. Each chicken breast is wrapped in a couple of slices of bacon. Wrap the bacon toward the other end, beginning at one end.
  2. Place a metal baking rack on top of a baking sheet that has been lined with aluminum foil. Top the rack with the bacon-wrapped chicken.
  3. Bake for about 25 minutes at 400°F. To get the bacon crisp, increase the temperature to 450°F and bake for an additional 5–10 minutes. The chicken should be cooked to a minimum internal temperature of 165°F.

2. Then 2 romaine hearts should be chopped and put into a big dish. Toss everything together after adding the tomatoes, red onion, cucumber, slivered nuts, and avocado.

3. Add a sliced bacon-wrapped chicken breast, a half of a hard-boiled egg, and salad to four equal dishes. Add about 2 teaspoons of dressing to each salad. Enjoy!!
