Crock-Pot Scalloped Potatoes and Chicken

If you're anything like me, super crazy and lazy, some days are just plain chaotic trying to get to activities, appointments, and other events. You sometimes need a supper that is SIMPLE to put together.

One of the simplest dishes ever created is this slow cooker recipe for Scalloped Potatoes and Chicken. I hope you'll also enjoy it a lot.

Ingredients

  • 1cup potatoes
  • 2 1/4cups boiling water
  • 3/4cup half-and-half or whole milk
  • 3cups cubed cooked chicken
  • 1cup frozen sweet peas
  • 1can (8 oz) mushroom pieces and stems, drained
  • 1/2cup plain bread crumbs
  • 1/4cup butter or margarine, melted
  • 1tablespoon chopped fresh parsley
    • Steps
    1. Oven should be heated to 450 degrees. Mix uncooked potatoes, sauce mix pouches (from potato mix box), boiling water, half-and-half, chicken, peas, and mushrooms in an ungreased 2-quart casserole.

    2. Potatoes should be cooked after 30 to 35 minutes of baking without cover and give it a stir.

    3. Sprinkle remaining ingredients over potato mixture after combining in a small bowl. Cook uncovered for a further 5 minutes, or until light golden brown.
